IMO, as a beginner - cheaper is better. $60 Freezeout at Boomtown Biloxi is the least expensive one on Saturday. I don't play there because they allow smoking, but that may not bother you.
If you don't mind spending $100+ I would go to the IP Biloxi for their 12pm $10k Guaranteed. You start with more chips than other local tournaments - $4000. Plus, you can play that morning and earn up to $1000 more ($250 for one hour, $500 for two, $1000 for 3) in tournament chips. This gives you a decent amount of play for your money.

The payout is based on the number of players. Most tournaments around here pay the top 10 with 50 or more entrants and the top 6 with less. They have fixed percentages which they use to divide the final prize pool.
For example, let's say $100 per person goes to the prize pool and there are 40 players. $4000 is the prize pool and is divided as follows;
1st - $1400
2nd - $1000
3rd - $600
4th - $520
5th - $320
6th - $160
You also have the option of doing a "chop" when you get in-the-money. That means you and the remaining players can decide to split the prize pool evenly to avoid playing out the entire tourney.
